About Shibata Koutetsu Chromax - Koutetsu are known for being the crazy thin, high-performance laser from master sharpener Shibata-san.This series, made from Chromax, a phenomenal semi-stainless steel favoured by blacksmiths for how well it can be sharpened and its edge retention. As a semi-stainless, it’ll patina pretty quickly, but the step between patina and rust is big enough that it’s pretty easy to care for.
About the Shape - This is also a multi purpose knife, but with a slight vegetable bias. Santoku means 'Three Virtues' or 'To solve Three Problems'. The virtues or problems are slicing, dicing and mincing. Santoku is usually found in 160mm - 190mm lengths. These are more and more popular in Western kitchens due to the unique shape and smaller easy to handle size.
